GUYOT WHITE 2020
Philosophy: Expressing the richness of a unique terroir in an elegant and delicate wine.
Origin: Grapes from very old vines, aged over 90 years, on granitic sandy soils at an altitude above 500m.
Grape Varieties: Field Blend, with more than 20 grape varieties present where Códega and Rabigato predominate.
Vinification: Manual harvest in boxes of 20 kg. Reception with total destemming, crushing, followed by cold maceration for 2 days at a temperature of 10ºC. Partial fermentation in 500 liter French oak barrels with indigenous yeasts and stainless steel vats at a controlled temperature of 17ºC.
Stage: 500 liter French oak barrels for 12 months + 12 months in bottle.
Bottling Date: April 2023.
Tasting Note: Straw yellow color with crystalline appearance, aroma of ripe fruit with tropical nuances wrapped in a light barrel toast that reveals harmony and complexity. In the mouth it has a very fresh and unctuous profile showing a combination of fruit and spices with a crunchy acidity that makes it extend.
